What's freeze-dried candy?
The freeze-drying process is known as sublimation. During this process, water is completely removed from the candy. When the water comes into contact with the freezing surface, it instantly freezes and becomes ice. The ice then undergoes a transition from solid to vapor, bypassing the liquid phase. As a result of this process, the texture and taste of the candy are significantly and positively altered. Hard or chewy candy is transformed into a lighter and more airy texture. With each crunch, the candy quickly dissolves, melting away in seconds!
